Umami Northern-Norway chef gourmet produce cuisine ingredients raw-ingredients short-travelled restaurant
Umami chef Sigrid Rafaelsen grew up on a farm just 30 minutes' drive from Harstad city centre, which was surrounded by mountains, fjords, agriculture and animal husbandry. The farm is still operated by Sigrid's family, and is the place where a number of the vegetables and berries on this evening's menu were gleaned by the cooks just a few hours earlier.
